This session we had a blast at Li’s house. The box from Tomato Mountain Farm had roasted tomato sauce, yellow onions, carrots, beets, radishes, and frozen butternut squash. Although the box had almost the same things as last session, everyone was inspired with new ideas.
La had the great idea to bring her juice maker. Li invited her neighbor Mi to join the group. She was very happy meeting everybody and very surprised at how amazingly well we work together.
Mi very quickly took on the job of helping La with the preparation of beet-carrot-radish juice. Simultaneously, Li introduced some of us to the spaghetti squash and how to bake it. Meanwhile, La concentrated the tomato sauce with caramelized onions (kind of a marinara sauce) to put over the spaghetti squash.
Cl and Ro made glazed carrot and onion salad. Al made a traditional beet salad (beets and lemon juice) with a new twist incorporating radishes in it.
Le surprised us by making delicious butternut squash gnocchi. We couldn’t believe how easy it was! And, as usual, of course Q made the most elaborate dish of the day! She made extraordinary butternut squash dumplings. It was wonderful to see how she prepared the mix for the stuffing and then the dough to make the wrappers. We all had the opportunity to practice and try our hand at rolling them out and stuffing the dumplings, but she really amazed us with her ability to do it fast and well.
We had a great time- and if I can say, ate maybe the most delicious meal celebrating the ending of the winter season- with the gnocchi, the dumplings, and also for many of us the new experience of the spaghetti squash. Thank you everyone who made this possible and thank you Mi for joining the group.
